Each month, we like to feature people we work with, our neighbors, or people who are influential in our community. This month, we would like to feature an amazing downtown restaurant here in Pensacola, the Union Public House.

Union Public House is an amazing downtown restaurant. This past holiday season we were fortunate to have Union Public House cater an event and provide a venue for Stevenson Klotz. Blake Rushing and Patrick Bolster, as it is affectionately known, own UPH. The menu can be described as casual with unique twists on traditional dishes.

Union Public House:Comforting, Southern Pub


Inside the single-story, white, concrete building on South Reus Street, a crafty Southern pub is serving inventively executed comfort foods, classic cocktails and cornbread as dessert.

Blake Rushing and Patrick Bolster came together to open the Union Public House after many years of separate experiences, projects and goals in the service industry.

The two met in high school in 1997 and became good friends, but went on to pursue different paths after graduation.

Rushing moved to Orlando to attend Le Cordon Bleu Culinary Academy in Orlando. After working at Wolfgang Puck's in Downtown Disney, he received the opportunity to intern in London for three months at the Savoy Grill, Gordon Ramsay's classic British and French restaurant, which opened in the late 1800s.

Rushing worked 17 hours a day, five to six days a week.

Quick Bites:Union Public House is a hit


When I was invited to the soft opening for the Union Public House, the new gastropub from chef Blake Rushing and mixologist Patrick Bolster, I was expecting great things. And I wasn't disappointed.

Presented with a variety of dishes and cocktails from the menu, my wife and I found a lot to love.

We started with a couple of delicious cocktails from Bolster's signature offerings, and really loved The Settler, a gin-based tribute to the city's heritage. We also tried and liked Bolster's take on the classic whiskey sour, the New York Sour.
