Union Public House offers special Paleo dinner

Union Public House co-owners Chef Blake Rushing and bartender Patrick Bolster will be your hunter-gathers Thursday for a Paleo Wine Dinner at their pub from 6 to 9 p.m.

The five-course menu has the refined caveman in mind with a high-fat, low-carb meal that will have any troglodyte forgo the cavern to check into a four-star hotel afterward.

The nontraditional Paleolithic cuisine for the evening includes a wine-pairing. Actual cave dwellers will not know what this grape substance is, and ancestral health fanatics who are on a strict Paleo diet may pass on the vino.

Amuse

  • UPH signature Scotch egg – soft boiled egg/house andouille/cracklin “breading”/avocado mayo

Cold starter

  • Tuna & swordfish carpaccio, serrano, 1st press olive oil, sea salt, beet aioli, pepitas, lime zest/juice, saffron oil
  • 2015 Macciocca “Monocromo #3”, orange wine – ripe citrus rind, vibrant freshness, fruit-driven tannins lead to a quenching palate

Hot starter

  • Spotted sand bass, citrus, fennel, toasted shaved macadamia, green garlic emulsion
  • 2014 Brusco Sangiovese, Toscana – warm dried earth, dried red berries, lean and clean with vibrant acidity

Main

  • 48-hour grass-fed beef pot roast, classic accouterments, Kerrygold butter & roasted garlic demi-glace
  • 2014 Domaine Guion, Bourgueil – blackberry, moist dark earth, leads to a soft palate to reward a silky texture

“Sweet”

  • Butter & coconut “ice cream”, cocoa nibs, fresh berries

 

Cost is $85 per person, plus sales tax. Call Union at 607-6320 to reserve a seat. Reservations for the event can only be made by phone. Seating is limited to 24 guests.
